Maggie Coblentz is a researcher and artist from Canada. Her current work explores how humans imagine outer space through science, technology, and culture. She works in the Science division at the National Geographic Society, and previously researched space food at the MIT Media Lab. She is the founder of Fieldscape, an initiative that connects artists and scientists through field-based research and collaborative projects, expanding access to remote research environments. Maggie is a member of the&#38;nbsp;International Astronautical Federation‘s Committee for the Cultural Utilisation of Space. Maggie
received a Master of Industrial Design from the Rhode Island School of Design.
Her work has been featured in publications such as WIRED, The Economist, Scientific American, BBC, NPR, CNN, and Popular Science.

	What does it feel like to float in zero gravity? How does food taste and smell when you’re weightless? Could floating upside down flip my own assumptions about this distant environment? I wanted to capture the personal and sensory experience of being untethered. I chose to tell this story through food, a medium that naturally bridges art and science, culture and technology.I created a tasting menu for a zero-gravity flight, designed to be experienced inside a custom Space Food Helmet. I was fully immersed in a personal universe, where each bite, smell, and sound floated around me.

	Parabolic flights simulate weightlessness through a parabolic maneuver that causes free-fall, allowing researchers to perform microgravity experiments on Earth.
 
The Space Food Helmet began as a practical solution for safety and evolved into an interactive experience. Gloveboxes are commonly used to contain experiments on parabolic research flights and on the ISS. They’re sealed containers with built-in gloves, so you can reach in and work with things without opening the box.Instead of a rigid box, I designed a personal “glovebox” that fits over my head, allowing me to insert my hands through the front, while nothing can escape.

In the Satellite House at the Harestua Solar Observatory, a jar of living sourdough sits beneath the telescopes. In the 1960s, this building housed the U.S. Air Force’s satellite camera, keeping watch over orbiting satellites. Later, astronomers installed telescopes here to study the stars. 
Today, in the same room that once monitored military skies, a sourdough starter ferments quietly. One telescope turns inward instead of skyward, collapsing the distance between microbes and constellations, between earthly memory and the unknown.

RESEARCH / VIDEOZERO GRAVITY FLIGHT WITH THE MIT MEDIA LAB
Gravity Proof is a performance and mission to prepare and cook bread in space. This multi-part work includes an experimental performance on a parabolic flight, film, and zero g bread recipes. Inspired by ancient recipes and archaeological bread remains, this exploration reimagines the cosmic past, present, and future of bread.

Parabolic flights reproduce gravity-free conditions in an aircraft through a parabolic maneuver of alternating upward and downward arcs interspersed with level flight. They provide a microgravity environment for scientists to conduct research without going into space. For this work, this environment was used to produce experimental methods to capture the materials, processes, and sensory attributes of bread in weightlessness, and to speculate on the future of&#38;nbsp; bread as it ventures off our home planet.

A custom baking spacesuit was made through a collaboration with Addison Söder, Söder Studio in London, UK. Among its many custom features for baking in zero gravity is a built-in toolbelt, an apron that floats in weightlessness—transforming into a wearable countertop, and poof sleeves that rise like bread.

Zero gravity bread recipes were made in collaboration with the R&#38;amp;D division of the restaurant Alchemist in Copenhagen, Denmark. Working within the parameters of space travel, experimental methods were designed to keep a sourdough starter alive, in addition to prototypes for special packaging for mixing dry ingredients in weightlessness.&#38;nbsp;

Just as food on Earth reflects its place and people, space fermentation has the potential to develop its own kind of “terroir,” expressing the character of life beyond our planet.
In this study, we investigated whether food fermentation is possible in space and how it compares to Earth-based fermentation. We produced miso, a traditional Japanese condiment, on the ISS over 30 days and compared it with two Earth-bound controls to examine microbial growth and flavour chemistry.The miso mixture was prepared using cooked soybeans, rice kōji, and salt. It&#38;nbsp;travelled to space in a small box outfitted with a camera and sensors to measure temperature, humidity, and radiation.&#38;nbsp;
